  • French beans blanched and cut into 1/2 inch pieces 4-5
  • Baby corn blanched and diagonally sliced 3-4
  • Broccoli florets blanched 8-10
  • Medium carrot peeled, blanched and sliced 1
  • Medium green capsicum cut into square pieces 1
  • Rice steamed to serve
  • Oil 1 tablespoon
  • Garlic finely chopped 1 to cook
  • Salt to taste
  • Cornflour slurry 1 tablespoon
  • Spring onions sliced for garnish

Stewed rice is a delicious and simple recipe to make. It is also surprisingly versatile, as you can use many different types of rice and vegetables to create a variety of flavors. Heat oil in a non-stick pan. Add garlic and sauté well. Add mushrooms and mix well.


Add French beans, baby corn, 1 cup water, and salt, mix and bring to a boil.


Add broccoli florets, carrot and capsicum and mix. Add cornflour slurry, mix well and bring to a boil.


Take steamed rice in a serving bowl, top with stewed vegetables, garnish with spring onion greens and serve hot.
